Mango Avocado Salmon

Ingredients

  • 2 salmon fillets
  • 1/2 avocado, diced
  • 1/4 cup onion, chopped
  • 1/4 cup of Bolthouse Farms Amazing Mango smoothie
  • 1/2 cup spinach
  • 1/4 cup french cut carrots
  • Minced garlic
  • Cilantro
  • Paprika
  • Salt and pepper
Preparation
  1. Saute onion and spinach in a pan with minced garlic until golden brown.
  2. Season salmon with minced garlic, cilantro, paprika, salt and pepper.
  3. Grill seasoned salmon fillets.
  4. Mix the smoothie, avocado and carrots.
  5. Place mixture on top of salmon fillets and enjoy!
