Mango Avocado Salmon
- 2 salmon fillets
- 1/2 avocado, diced
- 1/4 cup onion, chopped
- 1/4 cup of Bolthouse Farms Amazing Mango smoothie
- 1/2 cup spinach
- 1/4 cup french cut carrots
- Minced garlic
- Salt and pepper
- Saute onion and spinach in a pan with minced garlic until golden brown.
- Season salmon with minced garlic, cilantro, paprika, salt and pepper.
- Grill seasoned salmon fillets.
- Mix the smoothie, avocado and carrots.
- Place mixture on top of salmon fillets and enjoy!
